Potatoes:
3-4 Yukon Gold, russet or Sweet potatoes
Salt and papper to taste
2 Tablespoons Organic olive oil
1 tablespoon Garlic powder
1/2 cup Chives or parsley thinly sliced
Coat sliced potatoes in oil, salt, pepper and garlic powder first. Bake the potatoes in the oven for 15 minutes then for the grill mark grill them on grilled until they are tender and crispy for 10 minutes.
Garnish it with chives or parsley. Sprinkle Plantbased Parmasen cheese or almond or cashew flour on top as in replacement of cheese.
Sauce:
1 cup vegan mayonnaise made with avacado oil or olive oil
2 tablespoons sriracha the hot sauce
2 tablespoons fresh lime juice
1/4 teaspoon salt
Vegan low calorie Mayo:
1/2 cup Aquafaba (cooked chickpea water)
1 tablespoon red or white wine vinegar
1/4 to 1/2 teaspoon fine sea salt
1 ½ teaspoons Dijon mustard optional
1 teaspoon fresh lemon juice
1 cup Organic Avacado oil
1 teaspoon maple syrup
You can use it as dip, salad or on a sandwich. Very versatile, even you can use it as side dish on parties.
