Healthy Broccoli Soup: 4 servings 30 minutes use all Organic ingredients
1 large head Broccoli
1/2 cup Broccoli florets
1/4 cup Carrots
1 tsp Garlic
1 Onion, medium
2 Potatoes, medium
1 tsp Salt, pepper
1 tbsp Tahini
1/4 cup nutritional yeast
1 cup Almond Milk
2 cups Water
1/2 lemon juice
1/2 Roasted quinoa
Garnishing:
Roasted 1/2 cup quinoa with sea salt and peprika.
Lemon juice to give freshness
Direction:
Roaste all your veggies with salt and pepper.
Add tahini, almond milk and nutritional yeast along with all the roasted veggies.
Blend it all with 2 cups of water then add it all in big pot.
Let it simmer 5-8 minutes and let all the ingredients to marry with each other.
Now adjust the salt and pepper according to your taste.
In a separate pan roast quinoa with sea salt and red chili powder (optional)
Now add it on top of the soup as a garnishing. Lemon juice for freshness.
Enjoy.
