1 Tbsp lime juice (freshly squeezed)

1 Tbsp maple syrup (or date paste, link in Chef’s Notes)
2 tsps dijon mustard
1 Tbsp ginger (minced)
2 Tbsps water
Directions
Add all ingredients to a blender and blend until smooth. Taste for additional ingredients of choice like more ginger for spice, lime for tang, or tahini for nutty flavor.
Drizzle over veggies, grain bowls, salads, or tofu.
Green Tahini Sauce
Serves: 4Prep Time: 5 minutesCook Time: noneTotal Time: 5 minutes
Ingredients
¼ cup tahini
2 Tbsps jalapeño (optional, seeded and roughly minced)
¼ cup cilantro (optional, roughly chopped)
1 cup spinach (roughly chopped)
2 small garlic cloves
3 Tbsps lime juice (freshly squeezed)
¼ cup water (plus 1–2 tablespoons, more as needed)
1–2 pinches salt (optional)
Directions
Add all ingredients into a blender and blend until smooth.
Taste for additional ingredients of choice. Personally, we loved it as is and didn’t think it was bitter or that the greens could be detected, but bitter supertasters might need more garlic or a touch more lime to cut the bitterness of the greens and tahini. The pinch of salt helps to mask some bitterness as well.
Pour over top of a rice bowl or salad, or add to a hummus and veggie wrap!
