Vegan chicken salad



Ingredients: ( serves 2 ) 30 minutes

1 Celery stalk

1 tsp Garlic powder

300 g Jackfruit frozen or fresh

2 tbsp Parsley, Fresh

1/2 Red onions

1 tbsp Lemon juice

1 tsp Mustard

4 tbsp Vegan mayo

1 tsp Avacado oil

1/2 tsp Cumin, Ground


Directions:

  • Pressure cook your jackfruit with salt tumeric (yellow color optional) until 2-3 whistles.

  • Let your jackfruit cool down a bit.

  • Cook your spices in oil first. Avacado oil with all the spices add it directly to your cooked jackfruit.

  • Now add your chopped celery, onions, mustard, mayo, lemon juice and parsley chopped.

  • Adjust the salt and enjoy as dip, sandwich, salad or side holiday dish.
