Ingredients: ( serves 2 ) 30 minutes
1 Celery stalk
1 tsp Garlic powder
300 g Jackfruit frozen or fresh
2 tbsp Parsley, Fresh
1/2 Red onions
1 tbsp Lemon juice
1 tsp Mustard
4 tbsp Vegan mayo
1 tsp Avacado oil
1/2 tsp Cumin, Ground
Directions:
Pressure cook your jackfruit with salt tumeric (yellow color optional) until 2-3 whistles.
Let your jackfruit cool down a bit.
Cook your spices in oil first. Avacado oil with all the spices add it directly to your cooked jackfruit.
Now add your chopped celery, onions, mustard, mayo, lemon juice and parsley chopped.
Adjust the salt and enjoy as dip, sandwich, salad or side holiday dish.
